I have 8 gigs of RAM on the machine with 3 gigs dedicated to SQL. In studio management (under memory), it says:
Minimum Server memory: 0
Maximum server memory: 3000MB
Use AWE to allocate memory: off

The reason AWE is off is because I use Vista Ultimate 64-bit which can give ANY process more than 4gig (unlike in 32-bit where processes can only address upto 2gigs).

I queried a couple of tables which contain alot of rows (11million, db size is 7gigs) but SQL is not using all of the RAM. In task manager it says, SQL is only using 138MB of RAM (even though it's given 3gigs). How do I make it use all 3 gigs?

Have you tried setting the min server memory to 3000MB?

Are you sure the server really needs that much memory? Maybe it is possible the queries you ran were able to use indexes and didn't need to bring the whole table into memory and SQL Server only needs the amount of memory it is using.

Did you check sql memory usage in perfmon?
