The reason we want to do it is because my co-workers before me put the backups on to the same server as the production server, even though it has a RAID 5 disk array. I wanted to change that and put the backups on a separate machine in a separate location altogether for any possible disaster recovery scenario.

Your can back your dbs to NAS just fine. That MS article you referenced does not apply since it talks about placing the actual database files (as opposed to backup devices) on the NAS.
