Can you create a Linked Server using SQL Server 2000 which references tables defined in a SQL Server 2005 database?
If so, how does the security configuration work?

Yes you can. Try with SQL login. Make sure login exist in both server.

I was able to get a connect a SQL Server 2000 db to a SQL Server 2005 db using a Linked Server via SQL authentication. I now want to try to connect using Windows Authenticatin. Can this be done? When I try I get the following message "Login failed for user 'NT AUTHORITY\ANONYMOUS LOGON'.".

Just to make sure i understood it - To use the NT accounts it is set up on the AD level
In AD there is a setting to flag as" Security account delegation"
Then just use linked server setup as normal just like sql login but use the NT login
