Hiya

Is there any issues that I need to be aware of in changing from SIMPLE to FULL RECOVERY on a live database (ie ALTER DATABASE ...)?

Obviously, since it's simple at the moment, if there are any issues, I won't be able to "roll-back" (to any recent position anyway)...

I've done this a couple of months ago on SQL2K sp2 and it worked fine. Did a bit of research first on the web and didn't identify any real issues and then tried it on a test server then eventually on live. Obviously doing it straight after a full backup reduces your risk. One thing you might want to consider is backing up your transaction logs more often. If you have enough disk space, doing a restore to another database to make sure it worked is a good idea too.

Can't remember if I had to stop and start SQL Server but I guess that'll be in BOL

You should put that through test first. Full recovery can use a *lot* more log space than simple depending on what you're doing.
