I have been asked to:

need to get data on transaction volumes

-- specifically, transactions against the production database:

[1] average daily volume
[2] peak volume

for couple of databases on sqlserver 2000. How can we do that?

You can monitor the Transactions/sec Performance Monitor counter. Take a reading every minute or so, save the data into a csv file, and then you can import that csv file into SQL to do trending.
