I created a custom server role so that I can provide database access to one of our clients to see some views within their database. The problem is that when I connect as that user I can see the other databases that exist. I can't open them or do anything with them but I can see them. How do I change it so this user isn't aware of other databases?

Unfortunatly you cann't hide their name, though user will not be able to access these databasese but still she can see these databases name.
