No you can't skip over one transaction. Point in time recovery means you can go right up to a certain point in time for logged activity but when you stop it there you cannot skip a transaction and then resume the recovery.

Look into Lumigent Log Explorer if you want this functionality. It's the sort of tool that makes things liket hat possible.
