I would like to find out if there is some sort of criteria that can help me estimate the amount of memory SQL Server instance would be needing in next 12 months or so.

I see some memory pressures on the system but not sure how to quantify it in terms of how much memory I need to add? as if I dont add memory now I wont be able to add it for another year. I am expecting about 100 gb more data on the system and around 700 more users. I know this doesnt tell much but its a start.

For that size database, get as much memory as you can afford. On certain hardware platforms, the price goes up exponentially when you jump from say 32 to 64. We were looking at 400k for a 64GB system whereas the 32GB system was pennies in comparison. These were blade servers, your mileage may vary depending on vendor.

I used my experience and not any documentation.

What we would do to prove what we need is setup a performance environment that simulates what production will look like in x number of years. If our performance tests show slow response and we know it's due to a hardware bottleneck, then we upgrade the hardware.

You should check with server vendor, they usually price items on customer basis.
