Does anybody know that are the defaults during/after installation for the TCP/IP and Named Pipes Protocols?

What do you mean by defaults? Are you just referring to the port SQL Server is listening on? If so, the default is 1433 in SQL Server 2000.

Sorry, what I mean is if those two protocols are enabled by default?

Yes they are enabled if you select the option in the installation.
