I have never heard of a .dat_bak file. Apparently they are generated the same way as .bak files...but is dat_bak just a difference in file name?

Or is it some kind of compression or partial backup command.

I am noticing that sometimes the dat_bak files can be much smaller than a .bak....so I assume I could not do a full restore with just a .dat_bak

Those are all just file extensions. You can use any file extension you want for your backups. To see why your dat_bak and bak file sizes are so much different, you'll need to check the program that is creating those files.
