I'm doing an dataload(bunch of insert statements) into an empty database. When I'm done my data file (mdf) is ~40mb, the log file (ldf) is ~160mb!

I obviously don't care about logging this initial load. Is there a way to turn this off and then back on?

No, do your transaction in smaller batches and backup the tlog often or switch to simple recovery model.
