 converting text in a column

Can anyone help me with the following?

Output the text from a column in a table. Where there are spaces put *'s and for tabs put +'s.

Without using REPLACE, write a query to display the name in a column replacing 'o' with 'e'. for example exo.

Why do you want not to use REPLACE?

I was told there was a separate instruction to use rather than replace. I found one called translate
