I need assistance is getting a date to output in following formats:

mm/dd/yy and yymmdd

The big issue is I can't limit the year to YY

You should be doing this in your application and not in T-SQL. With T-SQL, you can use CONVERT function with the appropriate style, but this is a job for the presentation layer and not the backend.
