I need to know who created a linked server on our of our production machine. I've tried all three of these, but nothing tells me who did it.

select * from sys.servers
select * from sys.remote_logins
select * from sys.linked_logins

Is there a way, or is this not captured?

You'd have to write a DDL trigger on the server to capture linked server events, listed here: http://msdn.microsoft.com/en-us/library/bb522542.aspx

The DDL trigger will help you for future things like this, but it won't help you to find out who created the linked server if you didn't already have the DDL trigger in place.
