If you want to do a clean install with only one box, you're going to have a bunch of downtime. Basically, you have to detach all your databases and copy the files to another computer, script remaining objects and write them to another computer, rebuild the server with SQL2K, and migrate everything back.

You might find it easier to set up a temporary SQL server environment to hold the objects. Perhaps on a simple PC.
