Does the account that the SQLSERVERAGENT log on as have permissions to delete files? How much older than a week are the files?

You might want to delete the maintenance plan and then recreate it to see if that fixes it.

What service pack for SQL Server 2000 are you using?

Alternatively write a script to do the backups then you aren't reliant on whatever the maint exe decides to do.

DTS can be used in a similar way.
