I installed the MSDN version of SQL Server 2005 and installed the whole package. I notice it installed Visual Studio 2005 and by general rule we do not install applications on our database servers.
If I uninstall VS2005 will this cause any of the other parts of SQL to break?

Visual Studio IDE is integrated with SQL Server in 2005. Many features of SQL server (for example, SSIS) can not be utilised without Visual Studio IDE. So it is better to keep Visual Studio as it is integral part of SQL server 2005.

By the way, sql2k5 in msdn is developer edition. You can't use it for production.
