I am attempting to see if an application is calling a particular stored proc. i have the Profiler setup to only display the login and it is. I have all items set to display under Stored Procedures, but I can't see names of procedures in the Text Data.

How are the calls to SPs made? With RPC or directly?
Check out both SQL* AND SP* events.
If using RPC, check out RPC* events.

Did you capturing the SP:Starting or SP:Completed events? The Text column has the full name of the stored procedure, the Database ID column has the database name, and the Object ID column has the object ID.
